Shaoxing is a Chinese rice wine from Shaoxing in China. It is made by fermenting and distilling rice, which converts the rice starch to sugars. It is commonly used in Chinese and Taiwanese cooking.

Lotus roots can be purchased fresh or frozen (depending on where you live). They are the edible root of the lotus plant which grow under the ground, under water. They are tubular in shape, growling up to abot.ut 20cm in length. They look a bit like a potato, and have a nutty flavour, and crunchy texture. They are peeled and then cut and cooked. Make sure to use water with lemon juice to prevent them from discolouring once they are cut.

Taiwanese BBQ Sauce a sauce used for stir-fries, hot pot dipping sauce, or marinating meats for grilling. Can me mild or spicy.

Fried Shallots made from deep-frying sliced shallots. Typically used in soups, salads, sprinkled on dumplings as a garnish, or added into dishes.
