Sweet and Sour Pork - Hong Kong Style

500g pork scotch fillet, diced into 5cm cubes​

1/2 onion, grated

1 1/2 teaspoon grated ginger

1 1/2 teaspoon grated garlic

1/2 teaspoon baking soda

3 teaspoons cornflour

3 tablespoons light soy sauce

For frying

6 tablespoons cornflour

1/2 cup cornflour

2 cups canola or vegetable oil

Sweet and Sour Sauce

1/2 cup sugar

1/2 cup apple cider vinegar

4 tablespoons pineapple juice from a 400g tin of pineapple pieces in juice

4 tablespoons tomato sauce

1 teaspoon Worcestershire sauce

1 1/2 tablespoon light soy sauce

1 1/2 teaspoon oyster sauce

5 teaspoons corn flour

1/2 cup water
 

Stir-fry vegetables

1 tablespoon canola or vegetable oil

1/2 green capsicum, cut into 5cm squares

1/2 red capsicum, cut into 5cm squares

2 teaspoons ginger, grated

2 cloves garlic, chopped

1 onion, large dice

The pineapple pieces from 400g tin of pineapple pieces in juice (the juice is used in the sauce)

Steamed Rice

1 cup long grain rice

1 1/2 cups water

Sweet and Sour Pork is a combination of double-fried pork with a sweet and sour sauce which uses a combination of sweet and sour ingredients such as pineapple juice, vinegar, sugar, tomato sauce, oyster and soy sauces.

 

Sweet and Sour Pork is a Cantonese dish which was created in the 18th century by the Long Family. Hong Kong is considered to be part of the Canton region of China. This dish is very common in Hong Kong, and has made its way to the rest of the world.
