Chicken Broth

1 whole chicken
Boiling water to cover

Second Boil
4 slices white radish
3 slices ginger (2cm wide)
1/2 onion
1 green onion, chopped into 5cm lengths
Chicken carcass once meat is shredded
2 tablespoons soy sauce

Rice
1 1/2 cups sushi rice
3 cups water

Toppings
1 cucumber, julienned on the diagonal
1 carrot, shredded
2/3 cup dried mushrooms

Mung Bean Pancake
1 cup mung bean flour
1 cup water
1 egg, lightly beaten
1 green onion, chopped
1/2 teaspoon salt
2 cloves of garlic, crushed
butter for cooking

Egg omelette
2 eggs lightly beaten
Oil for cooking

To serve
1 teaspoon toasted sesame seeds

Pyongyang Onban (One Pot Chicken)
Pyongyang Onban is a one bowl chicken dish which includes rice, chicken, vegetables covered in a warm broth and then topped with a mung bean pancake and shredded egg. It is eaten during wedding and holidays in North Korea.
​
It apparently originates from a dish that a wife prepared for her husband in a hurry, when she was visiting him in prison.
