Macau Chicken
3 chicken breasts, cut into large pieces (or
6-8 boneless chicken thighs)

2 tablespoons olive oil
2 carrots, peeled and cut into thick slices
2 potatoes, peeled and diced
1 onion, sliced
250g jarred pitted black olives
2 tablespoons curry powder
3 tablespoons turmeric
400ml coconut milk
375ml evaporated milk
400ml chicken stock
2 tablespoons coriander, chopped

Marinade
2 tablespoons Shaoxing (Chinese Rice Wine)
2 tablespoons sugar
3 tablespoons soy sauce

Steamed Rice
1 cup rice
1 1/2 cups water
Equipment you need
Microwave container for cooking rice
Medium sized bowl for marinating chicken
Wok and stirring utensils
4 large bowls for serving

This is a Macanese style curry that incorporates chicken, coconut cream and olives with the Chinese flavours of soy sauce and rice wine.
Macau has an ethnic group known as the Macanese who are people born with both Portuguese and Macau ancestry. This is one of the original fusion foods which mix Portuguese and Chinese cuisine and ingredients.
