Mandu (Korean Dumplings) with Korean Green Salad

Dumplings

32 dumpling wrappers/skins

1 small zucchini finely chopped

1/4 small cabbage, finely chopped

1/2 onion, finely chopped

2 green onions, finely chopped

500g pork mince

1 tablespoon garlic, minced

2 teaspoons ginger, grated

1 tablespoon soy sauce

1 tablespoon sesame oil

1 egg

1/4 teaspoon salt

1/4 teaspoon ground black pepper

Dipping Sauce

2 tablespoons soy sauce

2 teaspoons rice wine vinegar

2 tablespoons water

1 teaspoon sugar

pinch black pepper

pinch gochugaru (red pepper flakes) (optional)

Korean Green Salad

2 outer leaves from iceberg lettuce

1 Lebanese cucumber, cut into half moons

1 Nashi pear, sliced thinly

1 French Shallot, sliced thinly

1 teaspoon sesame seeds, toasted

Dressing

2 teaspoons soy sauce

2 teaspoons white sugar

2 teaspoons rice wine vinegar

1 teaspoon fish sauce

1 teaspoon gochugaru (optional)

Mandu are Korean dumplings which are filled with vegetables or meat or a combination of both. They can be steamed, deep-fried, boiled or pan-fried. They are normally served with a dipping sauce.

 

The history of mandu dates back to the 14th century, and it is believed they were introduced to Korea from Mongolia during the Goryeon Dynasty. However, there is also a belief that they may have been introduced via the Silk Road from the Middle East, where they have similar dumplings.

Notes: You will have left over dumpling filling mixture. You could make this mixture into meatballs, fry in some oil over medium-high heat and serve with a dipping sauce, mix through leftover noodles, or add to lettuce cups for a nice little lunch.
