Beef Noodle Soup
2 tablespoons oil
700g boneless beef chuck, shank, or brisket cut into 1 ½ inch pieces
12cm piece of ginger, cut into thick slices
8 cloves of garlic, peeled
1 large onion, cut into 8 wedges
4 green onions (white part only)
1 tablespoon brown sugar
1 large tomato, roughly chopped
3 star anise
2 cloves
1 tablespoons Sichuan peppercorns
2 teaspoons whole fennel seeds
6 cups beef stock
½ cup soy sauce
250g Soba noodles
200g baby spinach
1 green onion, sliced
2 tablespoons coriander leaves

Taiwanese Beef Noodle Soup is a soup containing beef and spices which is simmered for a long time to develop it’s flavours. It is then served with noodles and greens such as bok choy, green onions and coriander.
Originally a Chinese dish, it is believed that the Kuomintang Veterans (about 2 million of them) who fled mainland China during the Civil War introduced this dish to Taiwan in Kaohsiung. Prior to this the Taiwanese didn’t eat beef as their cows were used for the production of other foods, such as plowing fields for crops and rice paddies.
