Bang Bang Chicken 

Bang Bang Chicken

2 chicken breasts

3 slices ginger

1 green onion, chopped finely

2/3 continental cucumber, julienned

2 carrots, julienned

1/2 iceberg lettuce, shredded

1/2 cup chicken stock

2 tablespoons light soy sauce

4 teaspoons black vinegar

2 tablespoons white sugar

1 1/2 tablespoons sesame oil

1 tablespoon chili oil

2 tablespoons sesame seeds, toasted

1 teaspoon ground Sichuan peppercorns

1/2 teaspoon salt

The authentic Bang Bang chicken is made from poached chicken which has be beaten to shred the meat, and served with shredded cucumber and a spicy sauce.

 

Bang bang chicken is a very new dish compared to some other Chinese dishes.It was invented at the beginning of the 20th century in a Sichuan town called Hang Yang Ba. The town was known for its tasty breed of chickens. The dish is a street food dish and was named after the wooden stick (called a ‘Bang’) used to bang the top of a cleaver to cut through the cooked chicken. The dish became popular, and then started appearing in restaurants in Chengdu in the 1920’s.
